As part of the Taste of Abby Fall Festival, join Chef Wayne Harris for an immersive, hands-on class dedicated to whole salmon fabrication and preparation. You’ll learn professional techniques for cleaning and filleting an entire salmon, minimizing waste, and utilizing every part of the fish with confidence.
Bring your own fillet knife (optional) to participate in the salmon fabrication demonstration. WUSTHOF fillet knives will also be available to purchase to all attendees during the class.
Using premium West Coast salmon and seasonal ingredients, Chef Wayne will guide you through three versatile recipes that showcase the fish from raw preparation to beautifully cooked entrĂŠes, finishing with a classic dessert.

Chef Wayne Harris is an accomplished Canadian chef whose career has spanned luxury hotels, award-winning restaurants, and culinary education. As Executive Chef at Vancouver’s Shangri-La Hotel, he led one of the city’s premier dining destinations, earning a reputation for refined cuisine, exceptional technique, and a passion for outstanding ingredients.
Wayne later helped develop and refine menu offerings for Cactus Club Cafe, contributing to one of Canada’s most recognized restaurant brands. He also worked alongside celebrated Canadian chef Rob Feenie as his sous chef during Iron Chef, bringing precision, creativity, and teamwork to one of television’s most demanding culinary competitions.

About Ranallo’s Pizza & Chef Giuseppe Cortinovis
Meet Ezio Ranallo and Giuseppe Cortinovis â two men brought together by pizza, passion, and a shared love for serving others.
Ezio Ranallo, a veteran sergeant with over 25 years in law enforcement, was born into a life of hard work and hustle. The son of Italian immigrants, Ezio holds dual citizenship and grew up in a family pizza shop, where he learned early that service comes in many forms. By age 10, he was delivering newspapers in the cold, dodging traffic, and learning responsibility the old-school way.
Looking to reconnect with his roots and brush up on new pizza techniques, Ezio enrolled in a masterclassâtaught by none other than Giuseppe Cortinovis.
Giuseppe was born in San Pellegrino Terme, Italy, where he grew up in his parentsâ bakery. He began making pizza to pay his way through university, and what started as a side job quickly became a lifelong passion. In 2014, Giuseppe moved to Canada to pursue new opportunities and share his craft. Since then, heâs become a two-time Canadian Pizza Champion and a finalist in top-tier European competitions. His approach is a mix of tradition, precision, and heart.
Ezio and Giuseppe instantly connected. They stayed in touchâtwo men from different worlds, united by dough and dedication.

He sourced a Piaggio Ape and worked with a local fabricator to build a custom gull-wing pizza boxâcompact, stylish, and outfitted with a Saputo stone oven. It became the first of its kind in British Columbia.
That spark of inspiration became Ranalloâs Pizza & Gelato Cateringâwhere Ezioâs deep-rooted sense of service and Giuseppeâs award-winning expertise come together in every slice.

1:30â2:30 pm Drop in at Open Space in Historic Downtown Abbotsford, at 33765 Essendene Ave #110, and participate in an art activity for all ages, inspired by one of The Reachâs CITI/SEEN murals!
2:30 pm Gather outside Aurora Roasters, at 2615 Montrose Ave, for a walking tour of select murals from The Reach Gallery Museumâs CITI/SEEN program, led by Kelley Tialiou, Curator of Art & Visual Culture.
Launched in 2019, CITI/SEEN is a public art program that supports the design and delivery of murals in Historic Downtown Abbotsford through a mentorship model. Aspiring and emerging visual artists from across the Fraser Valley have the opportunity to work with an accomplished mentor muralist, learn a variety of painting techniques, and develop working relationships with peers. Â
